Vegan Banana Fritters with Vegan Toffee Sauce

Make these for a special breakfast as a tea time treat. Banana fritters are enjoyed far and wide and our vegan version is made without dairy or eggs. Palm sugar is used in the sauce to create the rich toffee colour.
Method
Vegan Toffee Sauce
1. Put the coconut milk, palm sugar and salt into a saucepan over a medium heat.
2. When it comes to the boil lower the heat to low and simmer gently while stirring for 10 – 20 minutes until the sauce thickens.
3. Remove from the heat and stir in the coconut milk and pour into a warm serving jug.
Vegan Batter
1. Sieve the chickpea flour and bicarbonate of soda into a large bowl and mix them together.
2. Add half the water and stir to bring together a smooth thick paste.
3. Stir in the remaining water.
Banana Fritters
1. Line a baking tray with a few pieces of kitchen paper and set aside.Equipment
2. Peel the bananas, slice them lengthways then cut each length in half.
3. Put some oil in a frying pan over a medium heat.
4. Dip a piece of banana in the batter, shake off any excess and slowly slide it into the hot pan.
5. Cook over a medium heat until the base is golden, about 3 - 6 minutes depending on the heat.
6. Turn the fritter over and cook on the other side, another 3 - 6 minutes.
7 OR cook batter covered banana in a deep fat fryer according to the manufacturer’s
8 Remove banana fritters to the prepared baking tray, cover and keep warm.
9 Repeat with the remaining banana.
10 Serve the fritters warm with warm toffee sauce.
